Gnucash runs fine for me on 7.10 with compiz (Desktop Effects) enabled
and the restricted nvidia video driver.

Maybe try launching Gnucash in a different user account to rule out
anything specific to your everyday user?

As an update, it appears as though my issues are only with machines running the Xpress 200M video card.  It has happened on two different machines with that video card.  Two others with older, more generic cards work just fine.
